Shortbread Cookies with Jam Recipe
320g plain white flour
½ teaspoon salt
1 tablespoon vanilla extract
200g unsalted butter
2 egg yolks
200g caster sugar
Add butter, caster sugar, salt and vanilla extract into a bowl and mix.
Add flour and mix.
Add egg yolks and mix.
Prepare baking tray lined with baking paper.
Roll the dough into small balls (1 teaspoon each) and place onto baking tray.
Gently press the centre of each ball of dough to create a hollow in the centre.
Fill the hollow of each ball of dough with ¼ teaspoon of jam.
Pre-heat the oven to 180⁰C. Bake in the oven for 12 minutes until very lightly coloured.
Transfer cookies onto wire rack to cool completely.
